Pan roasted arctic char, mashed celeriac, maitake duxelle puree, beet crisps, creamed local sweet corn

Third course
 Braised lamb, brown butter grits, truffled root vegetables, micro basil

 Fourth course

 Roast beef tenderloin, pommes lyonnaise, chanterelle mushrooms, bordelaise sauce
